Figure 1 is a zippy, bright, sparkling white wine produced in Pet Nat style - bottled during primary fermentation, naturally sparkling, and hand disgorged to remove sediment.

On the nose, Figure 1 is subtle and delicate with swirls of lemon flesh + juice, quince blossom, a light touch of cinnamon and just a hint of vanilla. The body is striking and lean, with suppleness. On the palate, this thirst-quenching wine is packed with fresh-squeezed grapefruit and lemon, with a persistent fine bubble and focused acidity. Pair with pearls and pools.

Ideal serving temperature is around 45ºF; keep on ice.
