Troc Star
We played with pulp last harvest, resting our cider on both apple pomace and grape skins to enhance flavor and texture and so, Troc Star was born - a dry, balanced cider with notes of white grape, rose petals, apricot, and fruit leather.
To make Troc Star we punched down cider resting on Riesling skins from our good buds Shelburne Vineyards/Iapetus! So…what is a punch down and why do it? Pushing or ‘punching’ down the ‘cap’ - in this case a solid mass of riesling pomace, helps kick start the fermentation process by introducing oxygen to our yeast. Adding pulp back into cider creates a whole new experience of flavors, textures, and aromas, and frequent punch downs help pull out all that great stuff.
Using grape or apple pomace to introduce flavor is a great way to reintegrate natural bi-product in the wine and cider pressing process. After fruit is pressed, you're left with the skins, stems, seeds - all the bits and bobs that don’t have any juice but still have plenty of flavor!
