Protolith is a fresh, semi-carbonic red wine akin to a Beaujolais Nouveau but with a distinctly Vermont assemblage. Perfect for the heat of summer, this light-bodied red is served with a chill. Pair it with grilled seafood, sausages, pasta salad...any food you'd take to a beachside BBQ. Grape varieties:
On the nose, aromas of wild beach roses play with white pepper and cinnamon. It's rich & floral, yet bright. On the palate, Protolith grabs your attention! It tingles with warm notes of red currant, acai and tart blueberries. The wine is light-bodied, but with a silky smooth weight kept fresh by medium acidity. The finish brings strawberry jam and freshly-cut green stems, tapering off gently. About 50% of this wine is a semi-carbonic maceration of our Marquette grapes. At harvest, we carefully selected the most pristine Marquette clusters, taking care not to break any berries and removing any damaged ones from the clusters. In the winery, whole clusters were gently placed into a tank which had been purged of oxygen using CO2. After a 9-day semi-carbonic maceration, the partially broken-down fruit was foot tread and fermented on skins for 11 days with daily punchdowns. The wine was then pressed off into a stainless steel tank and blended with Petite Pearl and St. Croix rosé and a touch of L'Acadie Blanc. Malolactic fermentation completed spontaneously and the wine was bottled unfined and unfiltered.
